Happy Hour: Penicillin

That’s right, it was GL co-founder, George’s birthday yesterday! If you hadn’t noticed by his IG profile or the work we do here at GL, he’s a scotch guy. If you ever meet him and fall short on beard compliments, strike up a conversation about scotch and you’ll be just fine!

Today we’re mixing up a classic drink that is said to be the perfect cure for a cold night out, a Penicillin. Scotch cocktails are some of the most difficult to pull off because of the overpowering taste of the spirit, but this one does it quite well. As usual, we recommend ordering one at the bar to see if it’s enjoyable for you and then stocking up on the ingredients for your home bar.

Here’s what you’ll need:

2 oz Blended Scotch Whiskey (the blended is kind of important, so as to not waste too much of the fancy stuff on a mixed cocktail)

.75 oz lemon juice

.75 oz honey syrup (boiled water and honey mixed in equal parts; this is something you’d make separately in bulk, not just for each cocktail)

3 slices of fresh ginger

.25 oz Single Malt Scotch (something peated works nicely)

Add the fresh ginger into a shaker and muddle it well all by itself. Then add the blended scotch, lemon juice and honey syrup as well as some ice. Shake vigorously for 15 seconds or so, then strain the drink over ice into an old fashioned glass. Some people prefer to fine strain through a tea strainer to avoid any fresh ginger pieces in the drink. Lastly, add your quarter ounce of peated scotch over the top of the drink using the back of a spoon so that it floats right on top of the mixed cocktail. If you’ve got it, garnish with a piece of candied ginger, otherwise a lemon will do.
